Creamy
Burrito Casserole
From the kitchen at Almira
Ingredients:
1-1/2 lb ground beef
1/2 Chopped onion
1 Package or 2 tsp taco seasoning
6 Large flour tortillas
1 16 oz Can re-fried beans
1 10 oz Can Ro-Tel
Tomatoes & Diced Green Chilies
4 Cups shredded
taco cheese or cheddar cheese
1 10 3/4 oz Can cream of mushroom soup
6 Ounces sour cream
Instructions:
Brown beef and onion together and drain.
Add Ro-Tel Tomatoes & Diced Green Chilies,
taco seasoning and re-fried beans mix thoroughly.
Combine sour cream and
cream of mushroom soup in a separate bowl
and mix thoroughly.
Spread 1/2 sour cream mixture in the bottom of a 9 x 13
casserole dish.
Tear up 3 tortillas and spread over sour cream mixture.
Next, layer 1/2 of the meat/bean mixture over the
tortillas.
Then add a layer of cheese.
Repeat the layering process once again, finishing with
sprinkled cheese over the top
Bake covered at 350°F for 20 min then uncovered for 10
minutes.
